I was given this recipe by my wonderful Sister-in-Law Diane:
Corn Salsa
2 cans black beans, drained and rinsed
1 can corn drained
1 orange (or yellow) and red pepper chopped
1/4 purple onion chopped (I use sweet onions)
Mix together in large bowl.
In a smaller bowl, mix together the following:
2 tsp garlic
2 Tbsp cilantro chopped
1/2 cup olive oil
8 Tbsp wine vinnegar
salt & pepper to taste
Mix together and pour over corn mix.
Chill and enjoy!
